  • Dark rich and intense, this wine is made from fruit that is hand harvested and cooled overnight before being destemmed and fermented in open vats.  Post fermentation, the wine is allowed to go through secondary ferment in oak barriques, predominantly American at around 40% new oak.  Ageing is for a minimum of 18 months.
