Glenferrie Cabernet Sauvignon

  • Sourced from Deonte’s premium Yarra Valley vineyard, the Cabernet sauvignon vines are some of the oldest in the valley. Made from 33 year old Cabernet sauvignon located on the Yarra Valley floor – clone thought to be SA125. Low yielding, hand harvested and slowly fermented in stainless steel open fermenters. The wine is co-inoculated for malolactic fermentation and held on skins for 2 weeks post ferment. Pressed and allocated 40% new French oak – remaining barrels are 1 and 2 year old French. Wine is matured in oak for 12 months. The fruit is hand harvested and whole berry fermented in stainless open fermenters. Temperature controlled fermentation allows slower extraction of tannins and flavours, held on skins for approximately 1 week post ferment then pressed to 40% new French oak.

    A beautiful example of Yarra Valley cool climate Cabernet the wine shows alluring spice and elegantly lifted violet and lavender aromas, a seamless palate full of flavour together with mesmerising structural tannins to ensure longevity.
